The classical white coupage KAPATOVO Family Estate is a blend of the varieties Sauvignon Blanc and Viognier. The dominant variety in this coupage is Sauvignon Blanc. The wine is produced from grapes from our vineyards only.

The moment of picking was carefully selected, so that grapes preserved full aroma and were still fresh, with preserved acids.  We carefully sorted the grapes and cooled them.

Then we quickly squeezed the juice, without keeping the skins (otherwise we would make the wine coarse). The fermentation took place at moderately low temperatures for about three weeks, and then the wine gained roundness for some 4 months on the fine lees.

The colour is light straw with greenish nuances. The aroma is dominated by Sauvignon Blanc and Viognier adds to the citric fruit the aroma of apricot and peach. The body is medium, juicy and fruity, with a long finish.
